I think that a lot of these posts about the souls of the animals are all fanciful stories cooked up far before we have some actual information. There is no true proof that the animals' bodies are actually destroyed during the process of sacrifice. The only thing that happens from the Priests' or Paladins' perspectives is that the animals are placed on a shrine and flames consume them. After that we have no idea where the animals go. It's entirely possible that the animals go to the Garden of the Gods where they play around for half a day and are transported back to their forest homes.
One may think it preposterous that an animal may survive the flames that spout from the shrines, but it can be noticed that the Gods are constantly wreathed in divine fires without being actually burned. This also invalidates the claim that Shrines are covered in blood. In fact, the only time there is blood on the shrines is when the shrine is defiled.
In short I beseech all of you to refrain from defilement, violence, or threats thereof on account of this issue until there is a response from the Gods
